FRIED CRABS IN BLACK PEPPER SAUCE

Fried Crabs In Black Pepper Sauce


INGREDIENTS

600g mud crabs

1 tbsp corn flour

Dash of pepper

Enough oil for deep-frying

300ml fresh chicken stock

2-3 tbsp oil

1/2 tsp sesame oil

1 tbsp chopped garlic

1 tbsp chopped shallots

1 tbsp chopped red chillies

1 tbsp hot soya bean sauce

1/4 tsp freshly cracked black peppercorns


SAUCE INGREDIENTS

2 tbsp Premium oyster sauce

2 tbsp black pepper sauce

1 tbsp sugar


METHOD

1. Cut crabs into halves, then rinse and drain well
in a colander.

2. Sprinkle with corn flour and pepper.

3. Deep-fry crabs in hot oil until cooked through.
Dish out and drain oil.

4. Heat 2-3 tablespoons oil and 1/2 teaspoon
sesame oil in a work.

5. Add garlic, shallots, soya bean paste and the rest
of the sauce ingredients.

6. Fry until fragrant. Pour in chicken stock and bring
to a boil.

7. Put in pre-fried crabs and stir well to mix.

8. Cover the wok and bring to a simmer until gravy
is thick and dry.

9. Add in red chilli and sprinkle in freshly cracked
black peppercorns.

10. Dish out and serve immediately.
